Across from Sancere is Pouilly Fume. 100% Sauvignon Blanc, but the the profiles couldn’t be more different. BIG minimality, flinty, crisp citrus, leafy notes, and very structured. My favorite “wine-geek” moments are bringing out a bottle of Sancere and a bottle of Pouilly Fume to taste side by side with a meat and cheese board. If you’re hosting this holiday, this would be a great, great addition to a casual gathering, but also a pairing bottle for a lighter meal.
