“Cha-ko-leena” There’s a 100% chance I’ve made you try a sip of this if you’ve sat at my tables in the last year. Probably in my top 5 wines of all time. Basque region Spain, so the salt water from the sea is just dumped on these vines when it rains and they grapes take on a gorgeous salinity to them. A little green apple on the nose, but not at all on the palate. It’s like the wine wants your palate to cleanse with soft green apple before your first sip. It goes through a little carbonic maceration so it has a slight effervescence.
I’m totally obsessed and will be drinking this forever. I highly encourage it with any oysters, seafood, bell pepper sauces like romesco or pastas with similar profiles. It can hold up to pork and poultry too!
